Saturday night, Kristena and I checked out Alex Stupak’s new Mexican restaurant on West 4th street, Empellon.  It replaced Chow Bar, which I was sad to see go, but luckily, Empellon blows it and most of the restaurants I’ve been to lately out of the water.
We sat at the bar as all the tables were packed for the rest of the evening, and that ended up being a great decision.  The bartender who served us was extremely knowledgeable and gave us great direction on both our drink choices and our meals, and wasn’t half bad looking either :).  I tested out both the Empelloma and the Por Que No cocktails, with the Por Que No being our go-to for the rest of the evening.  So refreshing and delicious!
Having run the 10K in the morning and not eating much until dinner — we went with the guac and chips to start.  It came with two salsas, one of which was a smoked cashew which was AWESOME and went really well with the guac too.  We followed this up with the Octopus with Parsnip and Salsa Papanteca and the Fried Egg with Refried Beans Sope.  Both were excellent - the first served cold and the second we both agreed was our favorite dish of the night - so unique and tasty.  We finished with two taco selections: Fish Tempura with Cabbage and Lime Mayonnaise and the Lamb Barbacoa with Salsa Borracha.  The latter was especially delicious.
Everything from the service, to the food and cocktails, to the fun white brick decor was five stars - next time you have a hankering for Mexican or great food in general - get to Empellon!
